Ingredients
Scale
Posset Base
- 2 cups heavy cream
- 1/2 cup granulated sugar
- Zest of 1 orange
Flavorings & Additions
- 1/4 cup freshly squeezed orange juice
- 2 teaspoons vanilla extract
- 4 oz dark chocolate (70% cocoa), broken into pieces
- 1 teaspoon Vegan Gelatin (optional)
Instructions
- Heat cream mixture: In a medium saucepan, combine the heavy cream, granulated sugar, and orange zest. Heat over medium heat, stirring occasionally, until the sugar has fully dissolved and the mixture is warm but not boiling.
- Add orange juice and vanilla: Remove the saucepan from the heat. Stir in the freshly squeezed orange juice and vanilla extract, combining thoroughly.
- Melt chocolate: Pour the warm cream mixture over broken dark chocolate pieces in a heatproof bowl. Let it stand for a few minutes to allow the chocolate to soften, then stir gently until the mixture is smooth and glossy.
- Add gelatin (optional): If using Vegan Gelatin, first dissolve it in warm water according to package instructions, then stir it into the chocolate cream mixture until well blended.
- Chill to set: Pour the posset mixture into individual serving glasses or ramekins. Refrigerate for at least 2 to 4 hours or until fully set and firm to the touch.
- Serve: Serve the posset chilled, optionally garnished with extra orange zest or a dollop of whipped cream for added texture and flavor.
Notes
- For a dairy-free version, substitute heavy cream with coconut cream and use a vegan chocolate.
- Ensure the orange juice is freshly squeezed to provide the best flavor and natural acidity.
- Do not boil the cream mixture; heating just until sugar dissolves is sufficient.
- Chilling time can be extended overnight for a firmer set.
- Gelatin is optional to help stabilize the posset but is not necessary.
