Ingredients
Scale
Main Ingredients
- 1 cup grated zucchini (excess moisture squeezed out)
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 2 green onions (thinly sliced)
- ¼ cup chopped fresh parsley or cilantro
- 2 large eggs
- ½ cup all-purpose flour
- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon baking powder
- Olive oil or vegetable oil (for frying)
Instructions
- Combine Ingredients: In a large bowl, mix together the grated zucchini, corn kernels, thinly sliced green onions, chopped parsley or cilantro, eggs, flour, grated Parmesan cheese, garlic powder, salt, black pepper, and baking powder. Stir until the batter is uniformly combined and has a thick consistency.
- Heat Oil: Pour a few tablespoons of olive or vegetable oil into a large skillet and heat over medium heat until hot but not smoking, preparing it for frying the fritters.
- Form Fritters: Using a spoon, drop 2 to 3 tablespoons of the batter into the hot skillet for each fritter. Flatten them slightly with a spatula to form even rounds for cooking.
- Cook Fritters: Fry each fritter for 2 to 3 minutes on one side until golden brown and crispy, then carefully flip and cook the other side for an additional 2 to 3 minutes until equally golden and cooked through.
- Drain Excess Oil: Transfer the cooked fritters to a plate lined with paper towels to absorb any extra oil. Repeat the frying process with the remaining batter, adding more oil to the skillet as necessary.
- Serve: Serve the fritters warm with your choice of sour cream, Greek yogurt, or a simple squeeze of lemon to enhance the fresh flavors.
Notes
- To remove excess moisture from zucchini, place grated zucchini in a clean towel and squeeze tightly before mixing.
- For a gluten-free version, substitute all-purpose flour with all-purpose gluten-free flour.
- These fritters reheat well in the oven or air fryer, making them great for leftovers.
