Description

Delightfully buttery and savory Croissant Breakfast Sandwiches featuring scrambled eggs, melty cheese, ham, and crispy bacon, all enhanced with a sweet and tangy Dijon honey spread. Perfectly toasted for a crispy finish, these sandwiches make a satisfying breakfast or brunch treat.

Ingredients

Scale

For the Spread:

  • 2 tablespoons Dijon mustard
  • 2 tablespoons salted butter
  • 2 tablespoons honey

For the Sandwiches:

  • 4 large croissants
  • 8 slices of cheese (Gouda, baby Swiss, cheddar, or your favorite)
  • ½ pound deli-sliced ham
  • 8 slices cooked bacon

For the Eggs:

  • 5 large eggs
  • Splash of milk
  • Salt and pepper (to taste)
  • 1 tablespoon butter
  • Fresh chives (optional, for garnish)

Instructions

  1. Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
  2. Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
  3. Cook the Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture. Scramble gently with a spatula until just set. Remove from heat and set aside.
  4. Slice Croissants: Slice the croissants in half horizontally, but not all the way through, creating a hinge for easy assembly.
  5. Spread the Dijon Honey: Spread a generous amount of the prepared Dijon honey spread onto the inside of each croissant half.
  6. Add Cheese: Place 2 slices of your chosen cheese on the bottom half of each croissant.
  7. Layer Ham and Bacon: Add a few slices of deli-sliced ham and 2 slices of cooked bacon on top of the cheese.
  8. Add Scrambled Eggs: Spoon a portion of the scrambled eggs over the ham and bacon layer.
  9. Close the Sandwiches: Close the croissants, pressing gently to hold the fillings inside.
  10. Toast the Sandwiches (Optional): For a crispy finish, melt 1 tablespoon of butter in a skillet over medium heat. Place each assembled sandwich in the skillet and cook for 2-3 minutes per side until the croissant is golden brown and the cheese has melted.
  11. Garnish and Serve: Garnish sandwiches with fresh chives if desired and serve hot for the best flavor.

Notes

  • You can substitute the ham and bacon with turkey or chicken for a different protein option.
  • Use any type of cheese that melts well, such as mozzarella or fontina, for variation.
  • If you prefer, toast the croissants before assembling for extra crunch.
  • These sandwiches can be made ahead and reheated in a skillet or oven for quick breakfast on busy mornings.
  • Adjust the seasoning in the scrambled eggs to your taste for salt and pepper.
