Instructions
- Make the Dijon Honey Spread: In a small bowl, whisk together the Dijon mustard, salted butter, and honey until smooth. Set aside.
- Prepare the Eggs: In a bowl, whisk together the 5 eggs, a splash of milk, salt, and pepper.
- Cook the Eggs: Heat 1 tablespoon of butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture. Scramble gently with a spatula until just set. Remove from heat and set aside.
- Slice Croissants: Slice the croissants in half horizontally, but not all the way through, creating a hinge for easy assembly.
