Ingredients
Scale
Cake
- 1 box carrot cake mix
- Water as required by box directions, reduced by ¼ cup
- Oil as required by box directions
- Eggs as required by box directions
Frosting
- 4 oz cream cheese, room temperature
- 1 12 oz container vanilla frosting
- ½ cup powdered sugar (for dusting towel)
Instructions
- Prepare Cake Batter: Follow the carrot cake mix box instructions to prepare the batter, reducing the amount of water called for by ¼ cup. Keep the oil and egg amounts the same as directed on the box.
- Prepare Baking Pan: Line a 10½ by 15½ inch jelly roll pan with parchment paper and spray it lightly with non-stick cooking spray to ensure the cake will not stick.
- Bake the Cake: Pour the batter into the prepared pan and bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
- Roll the Cake: While the cake bakes, spread a clean kitchen towel on the counter and dust it generously with powdered sugar. When the cake is done, immediately invert it onto the powdered sugar-dusted towel, peel off the parchment paper, and roll the cake up tightly with the towel starting from the short end. Let this rolled cake cool completely for a few hours.
- Make the Frosting: In a mixer, beat together the room temperature cream cheese and vanilla frosting until smooth and well combined.
- Fill and Roll Cake: Carefully unroll the cooled cake and spread half of the cream cheese frosting evenly over the surface. Roll the cake back up gently without squeezing out the filling.
- Finish and Chill: Place the rolled cake on a serving dish and spread the remaining frosting on top. Chill the cake until ready to serve.
- Serve: Slice the cake into rounds starting from the short ends and enjoy your delicious carrot cake roll.
Notes
- Make sure to roll the cake while it is still warm to prevent cracks.
- Room temperature cream cheese ensures a smooth frosting without lumps.
- Using powdered sugar on the towel prevents sticking and helps with rolling.
- Chill the cake to allow the frosting to set well for cleaner slices.
- You can garnish the top with chopped nuts or shredded coconut for extra texture if desired.
