Instructions

  1. Prepare Cake Batter: Follow the carrot cake mix box instructions to prepare the batter, reducing the amount of water called for by ¼ cup. Keep the oil and egg amounts the same as directed on the box.
  2. Prepare Baking Pan: Line a 10½ by 15½ inch jelly roll pan with parchment paper and spray it lightly with non-stick cooking spray to ensure the cake will not stick.
  3. Bake the Cake: Pour the batter into the prepared pan and bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  4. Roll the Cake: While the cake bakes, spread a clean kitchen towel on the counter and dust it generously with powdered sugar.
