Ingredients
Scale
Shrimp and Marinade
- 1 lb large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup fresh pineapple, chopped
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon pineapple juice
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- 2 tablespoons fresh cilantro, chopped
- 2 green onions, sliced
- 1 tablespoon olive oil (for cooking shrimp)
Instructions
- Prepare the sauce: In a bowl, combine soy sauce, honey, brown sugar, rice vinegar, pineapple juice, red pepper flakes, salt, and black pepper. Mix well until the sugar dissolves and the ingredients are fully incorporated.
- Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove shrimp from the skillet and set aside.
- Sauté aromatics: Using the same skillet, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant, being careful not to burn them.
- Thicken the sauce: Pour the prepared sauce mixture into the skillet with the garlic and ginger. Simmer for 1-2 minutes until the sauce slightly thickens and becomes glossy.
- Combine shrimp with sauce: Return the cooked shrimp to the skillet. Toss them to coat well with the sauce and simmer for another minute to allow the flavors to meld.
- Add pineapple: Stir in the chopped fresh pineapple and cook for an additional minute to warm through and infuse sweetness into the dish.
- Finish with fresh elements: Remove the skillet from heat, then stir in the lime juice and chopped fresh cilantro to brighten the flavors.
- Serve: Plate the shrimp and garnish with sliced green onions. Serve immediately as a main course over rice or your preferred side.
Notes
- For extra heat, increase the red pepper flakes or add a dash of hot sauce.
- Fresh pineapple juice can be substituted with canned pineapple juice if fresh is unavailable.
- This dish pairs well with steamed white rice or coconut rice for a full Hawaiian-inspired meal.
- Use peeled and deveined shrimp for quick cooking and easy eating.
- To make this dish gluten-free, use tamari instead of soy sauce.
