Ingredients
Scale
Chicken and Seasoning
- 1 pound Chicken Breast, cut into bite-sized chunks
- 2 tablespoons Cajun Seasoning
- 3 cloves Garlic, minced
Sauce and Pasta
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese, freshly grated
- 2 tablespoons Butter
- 8 ounces Rotini Pasta
Finishing Touches
- 1 tablespoon Fresh Lemon Juice
- 2 tablespoons Parsley, chopped fresh
- Salt, to taste
- Pepper, to taste
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook for 8-10 minutes, or until al dente. Drain the pasta and reserve a cup of pasta water for later use.
- Cook Chicken: Coat the chicken breast chunks evenly with Cajun seasoning. Heat oil in a skillet over medium-high heat. Cook the chicken for 6-8 minutes or until fully cooked and nicely browned.
- Sauté Garlic: In the same skillet, melt butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Make Alfredo Sauce: Pour in the heavy cream and let it simmer for 2-3 minutes. Gradually whisk in the freshly grated Parmesan cheese until the sauce is smooth and creamy. Adjust the sauce thickness by adding some of the reserved pasta water as needed.
- Toss Pasta in Sauce: Add the cooked rotini pasta to the Alfredo sauce in the skillet and toss thoroughly to coat all the pasta. Let it simmer together for an additional 1 minute to blend the flavors.
- Serve: Divide the creamy Alfredo pasta onto serving plates, top with the Cajun-spiced chicken bites, then drizzle with fresh lemon juice and garnish with chopped parsley. Season with salt and pepper to taste.
Notes
- Use freshly grated Parmesan cheese for the best flavor and smoothest sauce texture.
- Reserve pasta water to adjust sauce consistency as needed—this helps bind the sauce to the pasta perfectly.
- Adjust Cajun seasoning amount to your preferred spice level.
- Serve immediately for the best texture and taste.
