Ingredients
Scale
For the Marinade and Chicken
- 1.5 lbs boneless skinless chicken breasts or thighs (for added moisture, opt for chicken thighs)
- 0.33 cup soy sauce (try tamari for a gluten-free version)
- 3 tbsp honey (maple syrup is a great vegan alternative)
- 2 tbsp olive oil (canola oil works well as a neutral substitute)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 0.5 tsp salt
- 0.25 tsp black pepper
For Kabobs
- 2 cups fresh pineapple chunks (fresh is ideal for taste and texture, but canned can be used)
- 1 large red bell pepper (feel free to swap with any color bell pepper, or use zucchini for a healthy twist)
Instructions
- Prepare the Marinade: In a mixing bowl, whisk together soy sauce, honey, olive oil, minced garlic, grated ginger, salt, and black pepper until well combined to form the marinade.
- Marinate the Chicken: Cut the chicken into 1-inch cubes and toss them in the marinade ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
- Prepare the Grill: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking during cooking.
- Assemble the Kabobs: Thread the marinated chicken cubes alternately with pineapple chunks and pieces of red bell pepper onto skewers, creating a colorful and balanced arrangement.
- Grill the Kabobs: Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally to ensure even cooking. Grill until the chicken is fully cooked through and has nice grill marks.
- Rest and Serve: Remove the kabobs from the grill and let them rest for a few minutes. Serve hot with your choice of sides for a delicious summer meal.
Notes
- For a gluten-free version, use tamari soy sauce instead of regular soy sauce.
- Maple syrup can replace honey to make the recipe vegan-friendly.
- Chicken thighs provide more moisture and flavor compared to chicken breasts.
- To avoid sticking, soak wooden skewers in water for 30 minutes before assembling.
- Feel free to swap bell pepper with other vegetables like zucchini or mushrooms for variety.
