Ingredients
Scale
Potatoes
- 2 pounds baby potatoes, halved
Seasonings
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Topping and Garnish
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes evenly.
- Toss Potatoes with Seasonings: In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, paprika, salt, and black pepper. Toss well to coat each potato piece thoroughly with the seasoning.
- Add Parmesan Cheese: Sprinkle the freshly grated Parmesan cheese evenly over the cut sides of the potatoes. Gently press the cheese onto the cut surfaces so that it sticks well to the potatoes.
- Arrange for Baking: Place the potatoes cut side down on a baking sheet lined with parchment paper or lightly greased to prevent sticking and ensure even cooking.
- Bake: Bake in the preheated oven for 30 to 35 minutes or until the potatoes are golden brown and tender when pierced with a fork.
- Cool and Loosen: Remove the baking sheet from the oven and allow the potatoes to cool for about 5 minutes. This resting time helps them firm up slightly so they can be easily loosened from the baking sheet.
- Garnish and Serve: Sprinkle chopped fresh parsley over the potatoes for a burst of color and fresh flavor. Serve warm as a tasty side dish.
Notes
- For extra crispiness, switch your oven to broil and broil the potatoes for the last 2–3 minutes of cooking, watching carefully to avoid burning.
- Serve these Parmesan crusted potatoes alongside dips like sour cream, ranch, or marinara to complement their flavor.
- Yukon gold or red potatoes can be used as a substitute for baby potatoes if desired.
